Native thyme is a very aromatic plant useful for flavouring breads, salads and sauces. It is also commonly known as Round Leaf Mint. This unique spice pairs well with savoury dishes and adds a herbaceous flavour with a slightly minty finish.
The leaves are antifungal/antibiotic and useful for maintaining gut health.
In the kitchen we recommend using the dried leaves with lamb – rub over before roasting, or put into a chicken cavity with a cut up lemon prior to roasting, or scatter over a salad before adding the dressing – the flavour will surprise you. As the flavours are quite strong, a little goes a long way.
